If frozen, thaw dough prior to baking.
Roll cookie balls in cinnamon sugar mix to lightly coat. Place on cookie sheet (parchment paper works great or you can line the sheets with alum. foil that yo you spray with non-stick spray). Bake for 11-13 mins or until puffy & just slightly golden. Once out of the oven let them firm up on cookie sheets 2-3 mins (they will slightly flatten too) and then carefully transfer them to cooling racks where they will firm up more. Store in a sealed container between layers of wax paper.
