Thaw pork completely. Keep potatoes in freezer.
Preheat oven to 400F. Set aside cider glaze. Start cooking the fries at the same time as the pork. Place contents of pork bag into a pan with sides that has been either heavily sprayed with cooking spray or has been lined with sprayed foil (for easier clean up). Bake pork for 10 mins. & then turn pork over. Cook pork for an add’l 10-15 mins until temp reaches 155F. Let pork rest for 5 mins before slicing.
While the pork is cooking, empty contents of the cider bag into a saucepan (to warm on stove) or a microwave safe dish (for microwave). After pork rests for 5 minutes, slice thinly on a diagonal and drizzle with the cider sauce. Serve hot with sweet potato fries.
Sweet Potato Fries: Place fries in a single layer on a baking sheet lined with alum. foil or parchment. Bake at 400F for 20-24 minutes. For crispier fries, increase heat to 450F for a few minutes at the end.
